National Pastry Championship 2009
In 2009, Anthony competed in the
National Pastry Championships on with teammates Ebow Dadzie and Bill Foltz, coached by Steve Evetts. Together, Team Dadzie took home the Bronze.
The team did practice runs prior to the competition at Paris Gourmet, where each of the chefs have studied technique and taken specialty courses.
Anthony was in charge of the chocolate, and created the bonbons in addition to the chocolate showpiece.
Anthony changed the design of his practice showpiece for the competition, which does not have numbers and is more refined. Here, the butterfly wings are also missing their spectacular color.
|  | Only a certain percentage of work could be done in advance of the competition, so there was much tempering, molding, cutting and sculpting work to be done on site.
